NBFA Recipe of the Month (July 2022) – Grilled Mexican Street Corn

New Beginnings Family Academy, along with friends at Whole Foods Market and funder Whole Kids Foundation, have teamed up to share some delicious recipes that promote nutrition, wellness, and fun collaboration in the kitchen.   

“We hope you enjoy trying these monthly recipes that support healthy eating,” said NBFA Director and CEO Ronelle Swagerty. “This is a great way for friends and family to make smart food choices together.”   
 
This month, NBFA is happy to share a recipe for the Grilled Mexican Street Corn!  
 
Whole Foods Market Grilled Mexican Street Corn  
 

The Grilled Mexican Street Corn is inspired by classic dish elotes that would be served by street vendors in Mexico. This recipe is perfect for anyone looking to add some variety to their summer barbecues.   

 

Start by preheating your grill to medium-high heat and season your corn with salt and pepper. Then, combine mayonnaise, sour cream, and half the cotija cheese with the other ingredients into a bowl. Place the corn on the grilled, and once they are ready, take them off and coat with the mixture. For the full recipe, click here.

Looking to Reduce the Amount of Fat? Swap regular mayonnaise and sour cream for the lite version, which will reduce the amount of fat in the dish.  

What Type of Corn to Use? When shopping at the grocery store, consider organic corn. Not only does it taste better, but it is also free of GMOs.
