Whole Foods

New Beginnings Family Academy, along with friends at Whole Foods Market and funder Whole Kids Foundation, have teamed up to share some delicious recipes that promote nutrition, wellness, and fun collaboration in the kitchen.

“We hope you enjoy trying these monthly recipes that support healthy eating,” said NBFA Director and CEO Ronelle Swagerty. “This is a great way for friends and family to make smart food choices together.”

This month, NBFA is happy to share a recipe for the Whole Foods Market Lunchbox Quesadilla!

Whole Foods Market Lunchbox Quesadilla Recipe

The Lunchbox Quesadilla can be customized with a variety of ingredients and is simple to prepare the night before. The quesadilla will last up to two days, so it’s perfect for anyone looking to prepare a healthy lunch ahead of time.

Start by heating a large skillet over medium heat, add in vegetables, then place a tortilla with cheese and fold together. For the full recipe, click here

Tips From Chef Todd:

Each month, NBFA Chef and Food Service Supervisor Todd Daigle will provide healthy tips on the recipe to give more options for taste or dietary restrictions.

Gluten-Free Option: If you are on a gluten-free diet, using a corn tortilla is a great option instead of a flour tortilla.

Up the Heat: If you prefer a spicier salsa, adding more jalapeno or habanero will kick up the spice.

We encourage you to share your experiences making the Recipe of the Month. Please share photos, videos, and suggestions on Facebook, Twitter, and Instagram @NBFAcademy.
